So moving out means I have to be self sufficient...I accept the challenge.
I am alright at feeding myself but I can see how at university it would be easy to slip into unhealthy habits, which I want to try and avoid as much as possible. Below I have written my favourite quick, cheap, easy and healthy-ish meal;
The Wholemeal Tortilla Pizza
Yes, Pizza.
Ingredients:
Tortilla (wholemeal or plain)
Tomato sauce for the base (in any form i.e. puree, ketchup, a tomato pasta sauce...improvise)
Cheese (your favourite kind..or none at all if you prefer)
Your Topping of choice
Instructions:
Take a tortilla.
Spread on a thin layer of tomato sauce as the base.
Add any toppings that are available in the fridge.
Finish with a sprinkle of cheese (I like chunky slices of mozzarella).
Put under the grill or into the oven until the cheese has melted (it takes like 5mins under my grill ).
Serve with a side salad.
Eat. Yum.
